Have you been looking for delicious dinner ideas that are packed with real, simple ingredients? We sure have! That's why we're so pumped to welcome Quesava to the Doorway Drop family! Made with cassava root (an incredibly versatile vegetable that is also the base for tapioca) and a host of other simple ingredients, you'll quickly find your freezer as full as ours with these amazing products. Did we mention that many of Quesava's products are 100% plant-based and are all naturally gluten-free while never containing any GMOs or refined sugars? That's what we call icing on the proverbial cake.

What the Heck is Cassava?

Cassava is a woody shrub that is native to South America and grown in many tropical locations around the world mainly for its starchy roots. Also known as 'yuca', cassava is a carbohydrate-rich vegetable that has been part of dishes worldwide for thousands of years. Due to its ability to survive harsh climates, cassava tends to thrive in tropical conditions and has earned the title of one of the most drought resistant crops. 

 

The cassava root is incredibly versatile. It can be eaten whole, grated, processed for it's starch (which is known as tapioca) or, as our friends at Quesava have figured out, ground into flour and used for all sorts of doughs and breads!

From Cassava to Quesava

It was in the 90's when Frances, the founder of Quesava, went to Brazil and fell in love with a very traditional Brazilian recipe called Pão de Queijo. She came back to Vancouver inspired and armed with a bag full of ideas. From one small stand in Granville Island, to a bakery on Main Street, to their first retail store, she helped pave the way for what the company is now. Thanks to France's ingenuity, you can now enjoy naturally gluten-free products made with the delicious cassava root ranging from samosas to cheese poppers, buns and brownies.

A Plastic Negative Company

As a small brand, Quesava recognizes that alternatives to plastic which are costly aren't within reach (yet!). In the meantime, they have partnered with rePurpose Global, the world's leading plastic action platform, to help reduce waste, revive lives and restore nature's balance through becoming a certified plastic negative company!

 

What does this mean?

 

Quite simply, for every gram of plastic used in Quesava finished products and shipping materials, they donate to cover the cost of removing 2 grams of plastic from the environment through proper reclycing programs.

Plant-Based Carbonara

Ingredients

1 box Quesava Ravioli

200 g  Raw Macadamia Nuts

Juice of 1 lemon

1 tbsp nutritional yeast

1 tsp salt

1 tsp garlic powder

1/3 tsp ground white pepper

300 – 400 ml hot water

1 tbsp vegan butter

A pinch of nutmeg

 

For smokey bits:

50 g of extra-firm tofu (cut in small cubes)

1 tbsp of grapeseed oil

Preparation

  1. Cook Ravioli following the instructions on the packaging

  2. Soak macadamia nuts in water until absorbed for at least 4 hours.

  3. Strain and discard water. Add all the sauce ingredients to the blender and blend until you get a nice thick sauce. 

  4. Follow the rest of the instructions from the video below.

     

    For smokey bits:

    1. Pan-fry the cubed smoked tofu on grapeseed oil using a non-stick pan, turning, until they are crispy.
