About Mr. Cooper's Pies
THE ORIGINAL / OUR FOUNDER
Mr. Norman Cooper as born in Coventry, England in 1914. He travelled to London at the age of 18, where he worked in the food markets. He obtained work with the British Lever Brothers & soon after was sent to Nigeria (British West Africa) where we spent the next twenty years living, marrying & working as a District Trading Officer. Norman then served as a commissioned officer with the British Armed Forces where he “trained and secured his territory for the crown” These were the most wonderful and happiest times of his life – he often regaled his audiences with colorful & entertaining tales of Africa.
YOUR MEAT PIE EXPERTS / OUR HISTORY
This is where Mr. Cooper worked developing a distribution system for the food division of Maple Leaf services (forerunner to the Canadian Armed Forces exchange system) for a number of years. After working as a business consultant in Ottawa for a few years, Norman moved his family to Edmonton where he was employed with developing IGA. That is where he would later come out of retirement to begin Mr. Cooper’s Pie – a chain of restaurants with Mr. Brian Cooper in 1982, at 68 years old. Mr. Cooper’s Pies quickly grew a following for their scrumptious pies around Calgary – successfully expanding to 11 chain restaurants. It was there they sold fresh baked daily quiches, sweet pies, sausage rolls and of course English Meat Pies! Unfortunately, due to the economic crash in Calgary Mr. Cooper’s Pies closed but the timeless recipes lived on through our family – all these years. Brian continued to bake & make pies throughout his children's lives – raising them up on these classic pies!
FAST FORWARD TO TODAY
In March of 2020 when the global Covid-19 pandemic hit – our family, like many others, struggled with the closing of their small businesses. It was at this time that Mr. Brian Cooper teamed up with local community member Shane Dagan, of the Steveston Seafood House. Brian owned a Bed & Breakfast in Richmond for over 20 years and Shane found himself in a similar situation with his restaurant, open since 1978, being closed as well. That is when the family decided to pivot and the resurgence of Mr. Cooper’s Pies began. Mr. Cooper started producing pies out of the Steveston Seafood House. With Shane’s savvy business and community involvement combined with Mr. Cooper’s timeless English Pie recipes – it didn’t take long to amass a loyal local following. They began distributing to local butchers & retailers throughout the lower mainland. Now with over 50 retail accounts – Mr. Cooper’s Pies proudly provides local, handmade pies throughout the Lower Mainland and Victoria! They also recently won “Best Mid-Sized Business of the Year” by the Richmond Chamber of Commerce for 2021. We strongly believe that it was our family’s ability to pivot during these difficult times that secured Steveston Seafood House this prestigious award and we look forward to continuing our expansion throughout the Lower Mainland, British Columbia and beyond!We're Restocking -

The Association of Integrated Development “OX EEK” Santa Maria Cahabón (ADIOESMAC), founded in 2004, cultivates and sells cacao, cardamom, cinnamon, and chili peppers.
Perched on a mountaintop overlooking the extensive jungled hills of the Cahabón region, the association processes cacao using cascading wooden fermentation boxes and a combination of greenhouse dryers, raised bamboo decks, and drying patios.
Adioesmac has been exporting fine cacao since the early 2000’s. Their cacao beans are distinctively large compared to nearly any other beans you will ever see, and have been whimsically referred to as ‘potato beans’ as a result (referring to their size, and thankfully not their flavour!).
The association plants more cacao trees every year, most of which are planted to reforest areas that had been cleared for the production of “milpa” (or corn) and bean production.
Adioesmac is a Wallace Craft Chocolate single origin supplier, with these beans representing the Central American region of cacao production.

This Nixtamalization process maintains the nutritional integrity increasing the body’s ability to absorb those nutrients and preserves the flavour in the tortilla.
MAiiZ Nixtamal Tortillas have a flavour, aroma, texture and an elasticity that is lost when using masa that has been dried into flour. Our Tortillas feel and taste better.

His love for all that Nixtamal Masa provides has, of course, been in his heart forever.
It is this love that he carried with him when he moved to Canada in 2008 that inspired him to start MAiiZ Nixtamal Tortilleria. Chef Israel finds immense joy in making MAiiZ Nixtamal Tortillas in the heart of Victoria’s Chinatown with Organic BC Corn. His hope is that everyone, from the curious home-chef to those like him that grew up with Nixtamal and miss it dearly, will love MAiiZ Tortillas as much as he does.
Nixtamalization is an ancient process by which the dry corn is cooked with slake lime to break down the husk surrounding each kernel. Being plant-based for many years, our founder, Stormy, felt it was about time to swap from serving tables at pubs to serving healthy food! From her own experience she realized that 'when you eat more plants you do the happy dance' and she couldn't wait to help her community do this! She started serving up smoothie bowls that were not only nutritious but also fun and delicious! These bowls were topped with her house-made Rawnola and it was a hit.
Fast forward 14,160 Rawnola Smoothie Bowls later, she knew her Rawnola was a hit. Turns out people love dates as much as she does! From a Cold Oven
- Place your Peakette straight from the freezer into your Peak Box, close the Peak Box lid and place into your cold oven at 500F for ~35 min (if baguette appears undercooked, add an additional 5 mins)
- Open the lid of your Peak Box (careful, it'll be hot), adjust your oven to 400F and continue baking for ~5 mins adjusting to your liking (less time for a lighter crust, longer for a darker crust)
- The hard part! Remove your Peak Box from the oven, and let the Peakette cool in your Peak Box for 15 mins, a crucial step to developing the perfect crumb and then, ENJOY!
